Smoked salmon is a great quick-and-easy for appetizers. It adds a touch of elegance to any table especially at holiday time.

Because of its subtle brining and rich flavor, you can blend our smoked salmon with cream cheese, herbs, or vegetables to make appetizers that range from dips to finger food.

One of our favorites is "Philadelphia rolls," which are a sushi roll made with smoked salmon and cream cheese.  Use a sushi roller.  Lay out a sheet of Nori seaweed, cover with cooled, sticky white rice.  Lay in a slice of cream cheese and some smoked salmon and roll tightly.  If needed, add a green onion in the center before rolling.  Slice and serve.

Our smoked salmon also mixes well with creme fraiche, roasted red peppers, and spinach to serve on brioche or crostini. You can also cut frittata (made with smoked salmon and red onion) into small squares and serve as a finger food appetizer with toothpicks.

Here’s another idea:  Slice a cucumber, cover with crumbled smoked salmon, top with a chive or two and a wedge of cherry tomato. Or, use thin slices of bread topped with shredded smoked salmon, drizzled with olive oil and topped with zest of a lemon...

Finally, you can tuck a small bit of smoked salmon and cream cheese into a Pillsbury biscuit dough round which has been flattened.  Fold over like a turnover and bake.
