    Smoked pink and sockeye salmon is a healthy, versatile, convenient, and really never tasted so delicious.  Hot oven grinders and grilled cheese sandwiches benefit greatly with adding smoked salmon.  This recipe was retrieved from food.com using the best ingredients to make one of the world’s most comforting winter time meals.  Consider serving this with vegetable or tomato soup on the colder days.

Smoked Salmon and Gruyere Panini

8 slices brioche bread
Dijon mustard, for spreading
8 thin slices Gruyere cheese
1/2 lb smoked salmon, thinly sliced
1 lemon, finely grated zest
kosher salt & freshly ground black pepper, to taste

Directions:
 
Heat up a panini press.

Spread the Dijon mustard over each of 4 slices of the brioche. Top each one with 1 slice of the Gruyere.  Divide all of the smoked salmon and grated lemon zest among the 4 slices of brioche. Season lightly with the salt and pepper and cover with the remaining slices on Gruyere. Close the sandwiches and grill on the panini press for 2 to 3 minutes, until the bread is toasted and the cheese is melted. Cut the panini in half and serve!

Putting on the pounds during the winter months way too easy.  It is nearly impossible to try to adhere to your diet plans but sometimes if you incorporate lots of omega 3 oils your body will feel satisfied with its fat intake.  Omega 3 oils are found in high amounts in salmon and should be increased in all of our daily diets according to many health experts.  If you’re contemplating a snack idea that is simple and refreshing, use cucumber boats or cups with your smoked salmon.  Food.com posted this next idea that has a traditional pairing of sour cream with fish and herbs.

Smoked Salmon in Cucumber chips By evelyn/athens

2 medium cucumbers, about 1 inch diameter
6 ounces smoked salmon
1/2 cup sour cream
1/3 cup chopped fresh cilantro leaves
1 tablespoon lime zest
2 teaspoons fresh lime juice
salt
cayenne pepper

Directions:
 
Peel cucumber; cut into 3/4-inch slices; using tiny spoon or scoop, form cucumber cup by scooping out seeds, leaving some flesh in base of cup; set aside.

In medium-size bowl, flake smoked salmon, discarding skin; blend in sour cream, cilantro, lime zest, lime juice, salt, and cayenne pepper to taste.
 
Mound salmon into cucumber cups; sprinkle lightly with a few grains cayenne pepper; garnish with additional lime peel strips, if desired.

To prepare for being inside more often this season, lots of people get reacquainted with their culinary skills for family and friends.  Here at FairhavenBaySeafoods an extensive recipe page can be found offering ideas in how to cook with smoked salmon.  But here's an all new one from Parade magazine.

Smoked salmon with scrambled eggs and lemon cream
(Parade March 2008)

  • 2 tablespoons sour cream
  • 3/4 teaspoon fresh lemon juice
  • 1/4 teaspoon (packed) finely grated lemon peel
  • 1/4 teaspoon chopped fresh thyme
  • 4 large eggs
  • 1 tablespoon butter
  • 1 large green onion, thinly sliced
  • 2 ounces thinly sliced smoked salmon

Mix sour cream, fresh lemon juice, finely grated lemon peel, and chopped fresh thyme in small bowl. Season the lemon cream to taste with salt and pepper.

Whisk eggs in medium bowl to blend; sprinkle with salt and pepper. Melt butter in medium nonstick skillet over medium heat. Add thinly sliced green onion and sauté 1 minute. Add eggs; cook until almost set, stirring often, about 1 minute. Divide scrambled eggs between plates. Top scrambled eggs with thinly sliced smoked salmon; drizzle with lemon cream and serve.

Salmon and Potato Cakes

 Here's a great little recipe from Nigella Lawson at Food Network.com

Ingredients

Directions

In a batter jug, whisk the eggs, milk, finely sliced spring onions/scallions and olive oil together.

Stir in the smash/potato flakes, flour and baking powder and then finally the lemon juice.

Heat a flat griddle, and drop tablespoon sized dollops of the mixture onto the hot griddle.

Cook for about 30 seconds a side or until golden brown and firm enough at the sides to flip.

Once you have made the pancakes, and they've cooled a little, tear off tiny strips of smoked salmon and arrange the small slices on each pancake.

Decorate each salmon topped pancake with a tiny feather of dill.

Creamed Smoked Salmon with Caviar

This spread is perfect brunch fare on black bread or bagels. Or hollow out a thin loaf of French bread, fill it with the mixture, and slice it for an hors d’oeuvre.

Yield: 2 cups

INGREDIENTS

  • 8 ounces cream cheese, room temperature
  • ¼ cup heavy or whipping cream
  • 1 scallion (green onion, white part and 3 inches green), thinly sliced
  • 1 teaspoon fresh lemon juice
  • Dash Tabasco sauce
  • 4 ounces smoked salmon, gently shredded
  • 2 tablespoons red salmon caviar

Directions

Gently mix the cream cheese and cream in a mixing bowl. Stir in the scallion, lemon juice, and Tabasco sauce. Gently fold in the smoked salmon and caviar until well combined, but do not overmix. The shreds of salmon and the caviar should remain whole.

Smoked Salmon Appetizer Ideas for Every Holiday Table

Smoked salmon is a great quick-and-easy for appetizers. It adds a touch of elegance to any table especially at holiday time.

Because of its subtle brining and rich flavor, you can blend our smoked salmon with cream cheese, herbs, or vegetables to make appetizers that range from dips to finger food.

One of our favorites is "Philadelphia rolls," which are a sushi roll made with smoked salmon and cream cheese.  Use a sushi roller.  Lay out a sheet of Nori seaweed, cover with cooled, sticky white rice.  Lay in a slice of cream cheese and some smoked salmon and roll tightly.  If needed, add a green onion in the center before rolling.  Slice and serve.

Our smoked salmon also mixes well with creme fraiche, roasted red peppers, and spinach to serve on brioche or crostini. You can also cut frittata (made with smoked salmon and red onion) into small squares and serve as a finger food appetizer with toothpicks.

Here’s another idea:  Slice a cucumber, cover with crumbled smoked salmon, top with a chive or two and a wedge of cherry tomato. Or, use thin slices of bread topped with shredded smoked salmon, drizzled with olive oil and topped with zest of a lemon...

Finally, you can tuck a small bit of smoked salmon and cream cheese into a Pillsbury biscuit dough round which has been flattened.  Fold over like a turnover and bake.

Dazzle your Guests with this Gourmet Appetizer

Adapted from a delicious recipe from Culinary Thymes. You will need a 6 inch cake or spring form pan for this yummy party appetizer.

Ingredients:

  • 1 lb. cream cheese, room temperature
  • 1 Tbsp fresh lemon juice
  • 3 Tbsp chopped fresh dill
  • 1/2 tsp salt
  • freshly ground black pepper to taste
  • 8 oz. smoked salmon, chopped
  • 1/2 cup sour cream
  • 1 (2 oz.) jar black lumpfish caviar, drained
  • 1 bunch chives, chopped
  1. Line a 6 inch cake or spring form pan with plastic wrap, letting some hang over the sides.
  2. In a standing mixer, beat the cream cheese until smooth. Add the lemon juice, dill, salt and pepper and beat until combined.
  3. Layer cheese mixture and drained smoked salmon in the cake pan, ending with a layer of cheese mixture.  Cover with plastic wrap and refrigerate overnight.
  4. Remove the plastic wrap from the top of the pan.  If using a cake pan, invert the cheese/salmon layers onto a serving platter. If using a spring form pan, release the side panels of the pan to release.
  5. Remove the plastic and spread the sour cream over the top with a spatula. Spoon the caviar onto the top, carefully spreading it all over. Top with the chopped chives.  Serve with toast points. Prep Time: 30 min. Serves: 6-8

wild salmonIn Celtic mythology the salmon is associated with wisdom.  Welsh mythology looks to the salmon as the wisest of all creatures.  Glasgow, Scotland features a salmon on the city’s coat of arms.  According to one Northwest Native Indian legend, salmon were actually human beings with superhuman abilities and eternal lives. 

When you know about the salmon’s incredible life journey, one that takes them from raging rivers to the mighty ocean and back again, it makes sense that our ancestors honored them.
